Emje Beef chilled meat is vacuum packed ageing.
Why vacuum packed ageing ? it significantly extends the
shelf life of chilled meat as well as improved hygiene.
This process provides an airtight, moisture-proof
package that protects the meat from oxidation,
dehydration & evaporation during storage.
Chilled meat is packaged into special plastic bags which
than have the air removed and sealed. The oxygen free
environment inhibits the growth of spoilage bacteria
while still allowing the natural tenderizing process of
ageing.
Tenderization by ageing occurs through the breakdown of
some structural proteins within the muscle tissue. The
muscle fibers are slowly broken down and become weakened
and therefore more tender through the action of enzymes
that occur naturally in the meat.
Our frozen meat products have been carefully selected
from a well-known Australian and New Zealand brands. We
also restore and repackage them with ultimate care of
our hygienic basic philosophy.
